Grandma's Irish Soda Bread

Baked fresh today
and oh so delicious!!

IRISH-SODA BREAD ~ •




3 cups of sifted enriched flour



2/3 " " sugar
1 tablespoon of baking powder
1 teaspoon of soda(baking)
1 teaspoon of salt



1 1/2 cups of currants or seedless
raisins
l,tablespoon of citrus fruit



2*eggs beaten
1-3/4 cups of buttermilk (thick}
2 tablespoons of corn oil, Mazola or malted shortening.




Sift flour, sugar, baking powder soda and salt into large bowl. Stir in- fruit, (raisins etc.) combine eggs, buttermilk and shortening.
Add liquid mixture to dry ingredients and blend until ingredients are moistened (Do not beat it) A little more milk may be needed Turn, batter into greased- loaf pan and bake in a preheated 350 degree oven for about one hour.
Remove from oven immediately, cool well before slicing.
After greasing the pan I shake a little flour to keep the batter from sticking to the pan.






In honor of St Patrick's Day, I thought I'd pass on Grandma's recipe for her Irish Soda Bread of which she was very proud ..Some of you may or may not know how she would always point out that hers was much better than Aunt Bridie's' A little rivalry there.!



Anyway I always liked it. I must warn you it is a little dry tasting but with melted butter on it and a cup of tea it goes down just fine. I hope you'll try it.

Hey I was at your house yesterday and you didnt even bring it out for me to taste, well I guess im not company anymore, or did you make it at sunrise today?????
Just kidding but I wiould like a taste if you still have and just a note our Grandmothers was moist and she was very proud of her bread and it took her all day to make and bake I remember her in the kitchen making it for Uncle Jimmy and guests.

that surely is a nice looking loaf of Irish soda bread or is it??

for the record it is not one that I baked, mine is in the oven as I write(Harry baked it)
